These Greek bowls showtime with a layer of farro (read on for substitutions) and get loaded up with fresh tomatoes, chopped fresh spinach, sliced carmine onions, sweet peppers, briny olives, crumbly feta cheese and a drizzle of red wine vinaigrette.
And if you lot've got it, a dollop of hummus as well.

Basically, these Mediterranean-mode grain bowls are a flavor explosion in your oral fissure with all kinds of textures, colors and contrasts to make your mouth sing!

You can serve them with the farro warm, immediately, but they are equally as delicious the side by side 24-hour interval straight from the fridge.

Ingredients
- 1 (8.8 oz.) purse quick melt farro (come across notes)
- 3 cups baby spinach
- 1 cup cherry tomatoes, halved

- 1/3 cup peppadew peppers, chopped
- 1/3 cup feta cheese, crumbled
- i/3 cup blood-red onion, cutting into thin slices or diced
- Optional: 1 cup hummus, divided
For the cherry-red wine vinaigrette:
- 1 tablespoon red vino vinegar
- 1 tablespoon fresh lemon juice (nearly 1/2 lemon)
- three tablespoons extra-virgin olive oil
- one teaspoon Dijon mustard
- ane/2 teaspoon dried oregano
- Pinch of salt and pepper
Instructions
- Cook farro according to package directions. Permit cool slightly.
- Meanwhile, prepare the remaining ingredients.
- To brand the vinaigrette, add all of the ingredients to a small jar or container with a lid. Cover and shake well to combine.
- Carve up farro and veggies among four bowls. Top each bowl with 1/4 cup hummus, if using. Drizzle with the vinaigrette and serve.
